  • 3 tbsp peanut butter β€” natural, no sugar
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp sriracha β€” or to taste
  • 1 tbsp lime juice
  • 1 clove garlic β€” grated
  • 1/2 cucumber β€” julienned
  • 2 scallions β€” sliced
  • 2 tbsp peanuts β€” crushed
