  • 1 can chickpeas β€” drained, rinsed, peeled
  • 1/2 cup tahini
  • 1/4 cup lemon juice
  • 1 clove garlic
  • 3 tbsp ice water
  • 3/4 tsp salt
  • 1/2 tsp cumin
  • 2 tbsp olive oil β€” for serving
  • 1/4 tsp paprika β€” for garnish

Instructions

    Process tahini and lemon juice in a food processor for 1 minute until thick and whipped.

    Tip: Processing tahini first with acid makes it lighter and creamier.

    Add garlic, salt, and cumin. Process 30 seconds.

    Add chickpeas. Process 1 minute. Scrape sides. Add ice water and process another 1-2 minutes until very smooth and creamy.
