Classic Hummus from Scratch
Silky, restaurant-quality hummus. The secrets: peel the chickpeas, process the tahini first, and use ice water. Night-and-day difference.

Process tahini and lemon juice in a food processor for 1 minute until thick and whipped.

Add garlic, salt, and cumin. Process 30 seconds.

Add chickpeas. Process 1 minute. Scrape sides. Add ice water and process another 1-2 minutes until very smooth and creamy.

Spread on a plate, create swirls with the back of a spoon. Drizzle olive oil, dust with paprika.
