Spicy Thai Basil Chicken
Pad Krapow Gai β the quintessential Thai street food. Ground chicken stir-fried with holy basil, chilies, and garlic. Best served over jasmine rice with a crispy fried egg.
Instructions

Heat oil in a wok over high heat until smoking.

Add garlic and chilies, stir-fry for 30 seconds until fragrant.
Tip: Don't let the garlic burn β it goes fast at high heat.

Add ground chicken, breaking it up with a spatula. Cook until no longer pink, about 3 minutes.

Add soy sauce, oyster sauce, fish sauce, and sugar. Stir-fry for another 2 minutes.

Kill the heat and toss in Thai basil leaves, stirring until just wilted.
