  • 4 large ripe tomatoes β€” cut into chunks
  • 1 English cucumber β€” cut into half-moons
  • 1/2 red onion β€” thinly sliced
  • 1/2 cup Kalamata olives
  • 8 oz feta cheese β€” one thick slab
  • 3 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1/2 tsp sea salt

Instructions

    Cut tomatoes into large chunks and cucumber into thick half-moons. Place in a large bowl.

    Add thinly sliced red onion and Kalamata olives.

    Drizzle with olive oil and red wine vinegar. Season with salt and oregano. Toss gently.
