  • 8 oz shrimp β€” peeled and deveined
  • 2 eggs
  • 2 tbsp tamarind paste
  • 2 tbsp fish sauce
  • 1 tbsp palm sugar β€” or brown sugar
  • 1 cup bean sprouts
  • 1/2 cup garlic chives β€” cut into 2-inch pieces
  • 1/4 cup roasted peanuts β€” crushed
  • 1 lime β€” cut into wedges
  • 2 tbsp vegetable oil
  • 2 tbsp dried shrimp β€” optional

Instructions

    Soak rice noodles in room temperature water for 30 minutes until pliable but still firm. Drain.

    Mix tamarind paste, fish sauce, and palm sugar in a small bowl until sugar dissolves.

    Heat oil in a wok over high heat. Cook shrimp until pink, about 2 minutes. Push to the side.

    Crack eggs into the wok. Scramble briefly, then add drained noodles.
