  • 3 tbsp butter
  • 6 cups beef broth
  • 1/2 cup dry white wine
  • 4 sprigs fresh thyme
  • 1 bay leaf
  • 8 oz Gruyere cheese β€” shredded
  • 1 baguette β€” sliced into thick rounds
  • 2 cloves garlic β€” halved

Instructions

    Melt butter in a large Dutch oven over medium heat. Add all the sliced onions and a pinch of salt.

    Cook onions, stirring occasionally, for 35-45 minutes until deeply caramelized and jammy.

    Tip: Low and slow is the key. Don't rush the caramelization.

    Deglaze with white wine, scraping up all the fond from the bottom. Cook until wine evaporates.

    Add beef broth, thyme, and bay leaf. Simmer for 15 minutes.
