Deeply caramelized onions in a rich beef broth, topped with a crusty crouton and a blanket of melted Gruyere cheese. Patience with the onions is everything.

Melt butter in a large Dutch oven over medium heat. Add all the sliced onions and a pinch of salt.

Cook onions, stirring occasionally, for 35-45 minutes until deeply caramelized and jammy.

Deglaze with white wine, scraping up all the fond from the bottom. Cook until wine evaporates.

Add beef broth, thyme, and bay leaf. Simmer for 15 minutes.
