  • 8 oz sharp cheddar β€” shredded
  • 4 oz Gruyere cheese β€” shredded
  • 4 oz cream cheese
  • 2 cups whole milk
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 1/4 tsp smoked paprika β€” for garnish

    Cook macaroni in salted boiling water until 1 minute short of al dente. Drain and set aside.

    In the same pot, melt butter over medium heat. Whisk in flour and cook for 1 minute to make a roux.
