Instructions

Preheat oven to 350°F (175°C). Line an 8x8 baking pan with parchment paper.

Pulse 1 cup flour, cold butter, powdered sugar, and salt in a food processor until it forms a dough.
Tip: Keep the butter cold for a crumbly, tender crust.

Press dough evenly into the prepared pan. Bake for 18-20 minutes until edges are lightly golden.

While crust bakes, whisk eggs, granulated sugar, remaining flour, baking powder, lemon juice, and lemon zest.

Pour lemon filling over the hot crust. Return to oven and bake for 18-20 minutes until filling is set.
