  • 2 cups jasmine rice β€” cooked
  • 1 can black beans β€” 15 oz, drained and rinsed
  • 2 lime
  • 1/4 cup fresh cilantro β€” chopped
  • 2 avocado β€” for guacamole
  • 3 roma tomatoes β€” diced
  • 1/2 red onion β€” finely diced
  • 1 jalapeno β€” seeded and minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 cup sour cream
  • 1/2 cup shredded cheese

Instructions

    Season chicken with chili powder, cumin, salt, and juice of half a lime. Grill or pan-sear until cooked through, about 5-6 minutes per side.

    Warm black beans in a small saucepan with a pinch of cumin and salt.
